INGREDIENTS: Tamale Dough:
3 cups masa harina
6 oz. lard
1 tsp. salt
2 tsp. baking powder
2 cups chicken stock

½ tsp. cumin
½ tsp. ground coriander
1 jalape±o pepper, minced
1 ½ cup Dunbars Roasted Red Pepper, diced
2/3 cup pine nuts, toasted
2 Tbsp. vegetable oil
to taste, salt and pepper
½ cup mozzarella
