Grilled Turkey Chops

6 turkey chops
1 1/2 tsp. kosher salt
1 1/2 tsp. black pepper

BRINE:
6 cups boiling water
zest of 2 oranges
1 cup honey or maple syrup
3 Tbsp. kosher salt
1 Tbsp. molasses
1 Spanish onion, cut in half and sliced
2 bay leaves
20 whole black peppercorns
