Lemon Poppy Seed Vegan Muffins

YIELD: 12 muffins

1 lb. Vegansweet baking muffin mix
1 1/4 cup water
1 Tbsp. lemon peel, grated zest
1/2 tsp. lemon juice
2 Tbsps. poppy seed

  1. In large bowl, combine powdered mix and water and mix well. Stir in lemon peel, lemon juice and poppy seeds.
  2. Spoon evenly into muffin cups. Bake for 15-20 minutes or until golden brown.
