Nutty Quinoa Salad

INGREDIENTS:.9188 lb. quinoa
1 qt. water
.125 lb. green onion
.4875 lb. mandarin orange sections, drained
.40 lb. golden raisins
.0313 lb. dried mint leaves
.0625 qt. sesame oilDIRECTIONS:1. Combine water and quinoa; bring to a boil. Cover, reduce heat and simmer 10 to 15 minutes until quinoa is tender.

2. In a large bowl, combine cooked quinoa with remaining ingredients, stirring gently to combine. Cover and chill. Serve chilled.NUTRITIONAL
