Red Beans with Rice and Smoked Sausage

INGREDIENTS:5 lb, 8 oz dried beans, pinto or kidney
1 lb, 13 oz onion, chopped
1 ½ cups green pepper, chopped
¼ cup salt
1 ½ tsp garlic powder
½ cup sugar
1 Tbsp + 1 tsp pepper
1 Tbsp + 1 tsp prepared mustard
2/3 of #10 can canned tomatoes
8 lb, 8 oz smoked sausage, sliced ¼ inch thick
3 lb, 6 oz rice, uncooked
1 Tbsp salt
3 qts boiling waterDIRECTIONS:1. Wash beans and soak overnight.

2. Drain water from beans, replace
