Blueberry Martini Dessert

YIELD: 30 servings

4 3/4 oz. large egg whites
8 oz. whole milk
9 grams vanilla
10 1/2 oz. all-purpose flour
10 1/2 oz. granulated sugar
19.5 grams baking powder
5 grams salt
2 oz. unsalted butter

1. Whisk together egg whites, 2 oz. (1/4 cup) milk and the vanilla.

2. Sift together dry ingredients into mixing bowl then mix on low speed with paddle attachment for 30 seconds to blend.
