Buffalo Chicken on Jalapeno Cheese Toast

A Texas favorite with jalapeno cheese toast instead of just plain bread.

YIELD: 10 servings

15 oz. chicken fajita strips
3 Tbsps. + 1 tsp. hot sauce
20 slices jalapeno-cheese bread
20 slices American yellow cheese
20 spritzes nonstick spray
3 Tbsps. + 1 tsp. light ranch dressing

1.    The day before service, thaw chicken in cooler. The day of service, chop defrosted chicken using dough cutter for bite-size pieces. Place chicken in large pan. Add hot sauce and stir well
