Pan-seared Pork Medallions with Hoisin Soy Sauce

2 tbsp. olive oil
1 tsp. fresh garlic, minced
1 tsp. yellow onion, minced
1 1⁄2 lb. pork tenderloin, cut into 1⁄2 inch medallions
1⁄2 cup hoisin sauce
2 tbsp. soy sauce
2 tbsp. sugar

1 cup bok choy, chopped
1 cup carrots, grated
