Asian Beans

Yield: 24 servings

1 qt. red onions, diced
2 cups celery, diced
2 cups red bell pepper, diced
2 Tbsps. garlic, minced, from a jar
2 Tbsps. vegetable oil
1 #10 can Bush’s Best Vegetarian Baked
Beans (7 lbs., 5 oz.)
2 Tbsps. ginger, ground
144 wonton wraps*

  1. In steam-jacketed kettle, sauté onions, celery, peppers and garlic in oil until tender but not soft.
  2. Add beans and ginger to kettle with vegetables. Heat just until warm.
  3. Transfer beans to a 4” deep half-size hotel pan. Place on hot serving line.
  4. To serve: Ladle two 3-oz. portions of beans into serving bowl.

*Option: Fry wonton wraps until crisp. Garnish each serving with 6 wraps for dipping. Wonton wraps may be prepared ahead and held in warming drawer.
