Banana Nut Bread

YIELD: 3 loaves

1 box Variety muffin mix
2 Tbsps. cinnamon
2 tsps. nutmeg
1/4 cup honey

whole over-ripe bananas

FOR TOPPING:
1 cup whipping cream
4 cups powdered sugar
1/2 tsp vanilla extract

Tbsps. honey
1/2 cup crushed pecans

Add muffin mix, cinnamon and nutmeg into bowl. Mix well.

Add honey and water (to direction of mix), and fold by hand. When mix is half way dissolved, add banana to the mix until fully folded. Do not overmix.

Distribute evenly into 3 third pans, and bake till golden brown. Let cool.

FOR THE TOPPING:
Add powdered sugar, honey and vanilla in a mixing bowl. Slowly mix in whipping cream until all sugar is blended into a smooth icing. (More or less whipping cream may be necessary depending on powder sugar brand.) Once blended well, add in pecans.

Remove bread from pans onto a cooling rack. Pour topping over each loaf.
