Mediterranean Chicken Sandwich

YIELD: per sandwich

4 oz. grilled chicken, diced
4 each kalamata olives, halved and pitted
1 slice red onion, quartered
1 heart artichoke, separated
6 each grape tomatoes, halved
1 oz. feta cheese, diced or crumbled
1⁄2 tsp. herb mix (rosemary, thyme, basil)
2 Tbsps. olive oil
1 Tbsp. balsamic vinegar
as needed salt and pepper
1 square focaccia bread, sliced and warmed

  1. Put all ingredients except bread in a bowl and mix well.
  2. Place mixture between slices of warmed focaccia bread to serve.
