Onion Apple Relish

YIELD: 10 servings

3/4 cups white sugar
1/2 cup apple cider vinegar
1 Tbsp. salt
1/4 tsp. Allspice, ground
1 each bay leaf, whole
1 tsp. thyme leaves, dried
1 tsp. orange zest, minced
1 Tbsp. yellow mustard seeds
1/4 tsp. red crushed pepper
1 tsp. garlic, minced
3 cups yellow onions, diced
3 cups Granny Smith apples, peeled, diced
1/2 cup dried sweetened cranberries, coarsely chopped

  1. Combine first set of ingredients in heavy saucepan. Bring to boil for 5 minutes until reduced slightly. Stir in onions and apples, then reduce heat to medium high. Cook, stirring often to prevent scorching, for 15 minutes, until liquid has reduced to a syrup-like consistency. Stir in dried cranberries. Cool in shallow pans, then store in refrigerator.
