INGREDIENTS:¼ cup rice wine vinegar
2 Tbsps. fresh lime juice
1 Tbsp. sugar
1 Tbsp. red onion, finely minced
1 Tbsp. fresh cilantro, rinsed, finely minced
1/8 tsp. ground coriander
1/8 tsp. ground cumin
½ cup mango, peeled, cut into ¼ inch dice
½ pint red raspberries
½ pint golden raspberries
DIRECTIONS:1. In a small bowl, combine vinegar, lime juice and sugar. Whisk until the sugar has completely dissolved.
2. Gently stir in red onion, cilantro, coriander, cumin and mango. Cover and refrigerate for one hour.
3. At service time, carefully fold in berries and gently mix with a rubber spatula so as not to damage berries. Serve with grilled chicken.
