YIELD: per serving
1 boneless, skinless chicken breast
2 slices pepper Jack cheese
1 sandwich bun
For the mango relish: (Makes 12 2-oz. portions)
6 mangos, diced
3 jalapeño peppers, diced
1⁄2 cup scallions
1 fresh whole pineapple, diced
1⁄4 cup red peppers, diced
1 lemon, juiced
black pepper to taste
1. Grill chicken breast until done.
2. Melt 2 slices of pepper Jack cheese on chicken breast.
3. Combine all mango relish ingredients together in a bowl.
4. Toast bun and place grilled chicken breast on top; serve with 2 oz. mango relish on top of chicken or on side.
