Apple and Pear Dessert Pizza

INGREDIENTS:9 cups mascarpone cheese
4 lbs. Granny smith apples
4 lbs. Bosc pear
24 7 inch Rich’s pizza dough shells
4 cups dried cranberries
2 cups hot water
1 ½ cups honey
¼ cup powdered sugarDIRECTIONS:1. Preheat oven to 500°F. Defrost pizza shells. Keep covered under refrigeration.

2. Core and slice apples and pears 1/8 inch thick, rub with lemon, reserve on ice.

3. On a floured surface with a rotating hand motion, stretch each pizza dough. Place dough on top of pizza pan and crimp edges.

4. Place cranberries in hot water and plump for 10 minutes; drain and reserve.

5. For each pizza: Spread mascarpone on pizza bottoms, top with a layer of alternating apple and pear slices. Sprinkle cranberries over apples and pears and drizzle with honey.
