1 qt. red onions, diced
2 cups celery, diced
2 cups red bell pepper, diced
2 Tbsps. garlic, minced, from a jar
2 Tbsps. vegetable oil
1 #10 can Bush’s Best Vegetarian Baked
Beans (7 lbs., 5 oz.)
2 Tbsps. ginger, ground
144 wonton wraps*
- In steam-jacketed kettle, sauté onions, celery, peppers and garlic in oil until tender but not soft.
- Add beans and ginger to kettle with vegetables. Heat just until warm.
- Transfer beans to a 4” deep half-size hotel pan. Place on hot serving line.
- To serve: Ladle two 3-oz. portions of beans into serving bowl.
*Option: Fry wonton wraps until crisp. Garnish each serving with 6 wraps for dipping. Wonton wraps may be prepared ahead and held in warming drawer.
