Sodexho has launched a "Healthy Habits for Kids" program incorporating illness prevention kits to more than 4,000 schools nationwide where the company provides food and facilities services. The program supplies schools with handwashing and instructional materials.

Au Bon Pain is now accepting credit card payment at all 127 companyowned sites and many of its 98 franchised cafes.

American Airlines says it will begin selling $3 snack boxes in main cabins on all domestic flights longer than three hours beginning in February (American had cut back on in-flight food after the industry downturn of 2001). The snack boxes will replace the current free main cabin food service on some 120 transcontinental and 40 Hawaii flights and save the company about $30 million a year.

Correction. We incorrectly identified Chef Mario Reyes, Nestle's corporate executive chef, as a "certified master chef" in the December issue (p. 12). The term was meant generically, to refer to Chef Reyes's demonstrated skills in the kitchen, and not to the official "Certified Master Chef" (CMC designation from ACF held by only a handful of chefs worldwide.
