YIELDS: 32 servings
2 1/2 cups mango pieces
3 Tbsps. lime juice
1 1/4 cup red bell peppers, chopped
3/4 cup red onions, chopped
1/3 cup cilantro, fresh, chopped
1 jalapeno pepper, chopped
1 tsp. kosher salt
1/2 tsp black pepper
- Finely dice mango pieces. Combine with all ingredients. Season to taste with salt and pepper. Cover and let chill. Serve as needed.
