Veal Chops with Caramelized Onion and Stilton Sauce

INGREDIENTS:6 Tbsp. unsalted butter
2 large onions, halved, thinly sliced
1 Tbsp. sugar
1 Tbsp. fresh thyme, chopped
¼ cup dried currants
1 shallot
2 Tbsp. all-purpose flour
¼ cup dry white wine
1 ¼ cups chicken stock
½ cup Stilton cheese
4 veal chops, 1½ inches thick
