Take a tour of the Rathbone diner, with its retro design, menu of diner classics (hello, perfectly smashed burgers), modern comfort food and fresh ingredients.
Last year, the Rathbone Dining Hall at Lehigh University, Bethlehem, Pa., was due for a new concept. Rathbone Director Lauren Sleeger and Executive Chef Joseph Kornafel knew they wanted a platform with customer interaction at the centerpiece. “We wanted to add an interactive, quick-paced, made-to-order component to round out the offerings already at Rathbone,” Sleeger says. After looking at successful past menus and talking to students, a diner concept began to take shape, with a focus on “regional and international comfort foods made with fresh, local and seasonal ingredients.”
