Chef Natoli wows with this ‘shroom cap that’s stuffed with bulger, lentils and quinoa. On the side, pan-seared polenta cake shares the stage with gluten-free bread pudding with mock crème Anglaise.
Pan-seared salmon with basil powder
Dehydrated basil powder makes the theatrics happen with this salmon dish from Sodexo Chef Patrick Kilduff of Bentley University. Parsley root puree and glazed baby veggies balance the dish with seasonality.
Hibiscus poached salmon
Chef Kilduff of Bentley University knows his salmon! But it’s what he does with the veggies that steals the show: Baby heads of lettuce, roasted pearl onion, shaved heirloom carrots, marinated baby tomato, pickled onion, toasted pepita and roasted garlic aioli.
Herb roasted chicken
Another from Kilduff, this comforting chicken dish features crushed peewee potatoes, baby veggies and roasted chicken au jus that’s been thickened with tapioca.

We had to share one more from Kilduff, this one with a princely purple lattice garnish made with gluten-free flour.
A good gumbo is a surefire winter soup lineup star. This one, by Sodexo Executive Chef Norman Hunt at Nicholls State University, is not only gluten-free but also vegan. So is the Cajun potato salad served on the side.
