A member of the nightshade family, eggplant is easy to grow in containers (hello, onsite gardening!) and also easy to incorporate into lots of flavor profiles, from classic Italian to modern Asian and portable wraps.

A fiery jalapeno-hoisin sauce gives this eggplant dish its oompf (pictured above). Dining Director Garrett Lucas and Sous Chef Evelyn Lopez, with Morrison Healthcare, start with sautéed Chinese eggplant then hit it with the spicy sauce, plus grilled red peppers and onions and a dash of Sriracha.
