Maple-bacon sweet potato salad

The Sodexo team at Marshall begins this summer-into-fall salad with roasted sweet potatoes. From there, the flavor takes off with jerk seasoning, fresh scallions, celery, red peppers and crumbled bacon. Maple syrup helps emulsify the dressing with grainy mustard and apple cider vinegar.

Maple rum cakes

Another great liquor-maple syrup combo, these cakes start with flour, melted butter, rum, egg yolks and whipped egg whites. Coconut flakes get toasted while the cakes bake and the rum sauce comes together with the addition of maple syrup. The sauce gets soaked into the cake for a sweet fall treat.
