Egyptian guacamole

Egyptian guacamole

YIELD: 4 servings

2 large ripe avocados, diced
1 Persian cucumber, finely diced
2 scallions, finely sliced
1 tbs. harissa
½ lemon juice and zest
½ tsp. za'atar spice blend or dukkah

1. Combine all ingredients in a mixing bowl.

2. Mash approximately half the mixture and combine with the chunky other half.

3. Serve chilled with toasted lavash or pita bread.
