Kombucha is a tart, fizzy, fermented tea beverage that contains a live fungus called a “SCOBY,” or a symbiotic culture of bacteria and yeast. The tea, with purported health benefits, has become popular alongside other beverages with potential health benefits — coconut water and kefir, for example. It’s also popping up in cocktails.
Kombucha is in the Inception stage. It’s considered a premium ingredient that can be found at health-forward cafés and trendy bars.
