One On One With: Sodexo’s healthcare dietitian on breakthroughs in nutrition for coronavirus patients

Cordialis Msora-Kasago, MA, RDN, is an expert on nutrition, cultural competency and disease prevention. Food Management asked her for the latest in healthcare dining’s response to coronavirus.

Hospital dining has the power to help patients heal beyond what they eat while they are there—after they leave the hospital and are trying to make better food choices on their own. With the coronavirus pandemic continuing, getting well and staying well are more important than ever.

On today’s episode of One On One With, Food Management speaks with Cordialis Msora-Kasago, MA, RDN, and her work with Sodexo’s healthcare division. We focus specifically on coronavirus patients, because it’s still a problem, even as we start the new year. And the dietetics community is learning new things every day, so it’s good to keep up with any new ideas.

Msora-Kasago is an expert not only on healthcare foodservice for patients while they are in the hospital, but also how hospitals can reach out into the community and make an impact on nutrition and overall wellness, especially in Black and brown communities where inequalities like food deserts/access to healthy food is just one obstacle.
