That includes school districts and hospitals as well as major higher education institutions like Ohio State University. Reasons cited by produce vendors include a greater emphasis on nutrition, more consumer demand for fresh dishes and commodity prices that are driving up the cost of center-of-the-plate items, putting more focus on produce as an ingredient, according to a spokesperson for the Ohio Restaurant Association.
