Catering's Best Bites

Minis and small plates are just the right size for catering and especially in customizable settings, the little things can get the biggest results. They can be savory, sweet, spicy, tart, salty, creamy or crunchy — anything your clients could dream up.

Consider mini items, like Mini Salted Cupcakes or Mini Bao Burgers (see recipes, this and next page) are not only super cute scene stealers; they're more fun, allowing guests to sample a little bit of everything.

The sky's the limit with what can work on small plates. Now is the time to try something unexpected, like Portabella Skins with all the toppings you'd normally see on classic potato skins (see recipe, this page). A whole lot of flavor can fit on a small plate. Consider Mango Plum Braised Short Ribs with Mango Salsa (find the recipe and more on food-management.com). Here are some other ideas to sample.
