Congressional staffers are looking forward to more vegetarian and vegan options in Capitol Hill cafeterias despite the termination of formal Meatless Mondays, reports Roll Call. The Congressional Vegetarian Staff Association worked with a lobbying organization called the Farm Animal Welfare Coalition to ask Restaurant Associates, which manages Congressional foodservice operations, to offer more meatless meal options in the future. Meatless Monday, a national initiative designed to encourage the consumption of more meals without animal proteins, was held once, on June 3rd, on Capitol Hill but ran into opposition from meat producers and their allies among farm state legislators.
