Texas High School Adds State-of-the-Art Meat Processing Lab

Equipment designed for ag science instruction includes sophisticated smoker and hog scalder/scraper.

Longview (TX) High School has opened up a $2.2 million meat processing lab to teach students how to age and cut meat, reports the Longview News-Journal. Reportedly the only facility of its kind east of I-45 (which connects Houston and Dallas), it includes a state-of-the-art smoker, a harvest floor with a hog scalder/scraper, an aging room, vacuum-seal packing equipment and two freezers. Pending the finalization of a HAACP plan and a USDA inspection, the facility will eventually begin turning out product for retail sale.
