UM Hospital Opens Big Salad Unit

Chain's menu tweaked to incorporate selections adhering to healthcare insitution's internal healthy dining guidelines.

The University of Michigan Hospital in Ann Arbor and its dining services provider Aramark Healthcare are opening a The Big Salad unit in the healthcare facility's onsite cafe on April 9. The commercial restaurant chain's seventh outlet will feature a freestanding counter service location as well as a gourmet salad bar where customers can create their own salads.

The outlet will offer a variety of The Big Salad's signature hand-crafted creations as well as others developed with Aramark Healthcare that meet U-M Hospital's MHealthy Dining Program nutritional guidelines, which take portion sizes and limits on fat content, sodium and sugars into account. The MHealthy menu items were reviewed and approved by U-M registered dietitians.

“We’re excited to be a part of the dining scene at U-M University Hospital,” says The Big Salad founder/CEO John Bornoty. “We’re bringing more fresh, fast and healthy food choices to U-M hospital staff, outpatients, as well as visitors.”

This is The Big Salad’s second location in a health care setting, following the opening last October of Nourish by The Big Salad at AL!VE, the Hayes Green Beach Memorial Hospital’s experience-based destination health care park in Charlotte, Mich.

Founded in 2008, The Big Salad says that with its iceberg, romaine or spinach bases and choice of 40 toppings and 30 dressings, more than 17 million distinct salad combinations are possible. The menu also includes a variety of fresh sandwich and soup options, and any salad can also be put into a wrap.
