University of Maryland Dining Services will be serving lamb raised on the school's campus farm at its 251 North dining venue and its Green Tidings food truck, reports the Diamondback campus paper. The 14 animals had been purchased by UMD Dining Services from the agriculture and natural resources college and raised by students in a Applied Small Ruminant Partition class until June, when they were slaughtered ands the meat frozen. The use of the campus raised meat helps reduce the carbon footprint of the dining operation while supporting other departments within the campus community.
