YIELD 1 serving
2 whole-wheat tortillas
½ cup shredded chicken, cooked
½ cup shredded cheddar cheese
2 oz. prepared mango salsa
1. Heat skillet over medium heat. Place tortilla on heated skillet and layer both cheeses and chicken on top. Place other tortilla on top of that.
2. Flip when cheese has started to melt (about 4 minutes) and cook an additional 3 minutes or until cheese is melted.
3. Slice quesadilla into 4 wedges and serve with mango salad and corn chips (if desired).
