YIELD: 1 sandwich
1 Tbsp. maple mustard (combine maple syrup with light brown sugar and Dijon and whole grain mustards)
1 ½ oz. roasted chicken breast, julienned
1 slice bacon, cooked crisp, cut in half
1 prepared flatbread, oven fired, cut in half, crosswise
½ oz. Swiss cheese, slice
2 Tbsps. shredded lettuce
2 plum tomatoes, fresh, sliced ¼”
1. Place chicken on bottom half of flatbread. Top chicken with cheese, cut or folded in half. Top with bacon, lettuce and tomato.
2. Place sandwich on sheet pan and hold refrigerated until ready for service (same day). Place sandwich on 350°F degree Panini grill. Grill for 2 minutes or until golden brown, cheese is melted and internal temperature is 165°F.
