YIELD: 12 entrée portions
3 lbs. chicken breast, sliced
3 cloves garlic, crushed
4 red chilies, seeded and sliced
3 large red peppers, chopped
1½ cups oyster sauce
¾ cup cashews, roughly chopped
4 cups bean sprouts
¾ cup basil leaves, sliced
12 kiwifruit, peeled and cut into chunks
Fresh egg noodles, optional
2.Stir-fry chicken in batches in a hot oiled wok or pan until browned and tender. Remove from pan and keep warm. Add garlic, chilies and red pepper and stir-fry until tender. Return chicken to wok with remaining ingredients and stir-fry until just hot.
3. Serve on a bed of egg noodles
