Yield: 24, one-cup servings
6 qts. chicken stock
6 oz. fresh ginger, peeled and cut into 1/4-in. slices
12 pods star anise
3/4 cup soy sauce
- Bring stock, ginger and star anise pods to a simmer over medium heat.
- remove from heat and allow to sit, covered, 10 minutes.
- strain and add soy sauce.
- serve alone as broth, or pour over cooked thin noodles, garnished with cooked shrimp, snow peas and cilantro, if desired.
