For the biscuits:
4 ½ cups all-purpose flour
½ Tbsp. granulated sugar
1 Tbsp. kosher salt
1 ½ Tbsp. baking powder
1 heaping tsp. baking soda
9 oz. butter, cold, unsalted, cut into small pieces
