Chilled Fresh Blueberry Soup

INGREDIENTS:4 qts.fresh blueberries
1 cupapple juice
3/4 cuphoney (or to taste)
½ cuplemon juice
1 Tbsp.grated lemon peel
2 tsps.ground cardamom
1 cupvanilla yogurt or créme anglaiseDIRECTIONS:1. In a blender or food processor, combine blueberries, apple juice, honey, lemon juice, lemon peel and cardamom; strain through a fine sieve.

2. Chill mixture.
