Ricotta and Lemon Thyme Sorbet

INGREDIENTS:3 cups water
1 ¼ cups sugar
8 sprigs lemon thyme, finely chopped
2 cups Polly-O® Impastata ricotta
2 cups crème fraiche
2 tsp. vanilla
2 Tbsp. lemon juice DIRECTIONS:Bring water, sugar, and thyme to a boil and reduce to 3 cups. Chill in an ice bath. Whisk in ricotta, crème fraiche, vanilla and lemon juice. Freeze according to machine instruction
