Honey Chipotle Raisin Glazed Salmon

YIELD 4 servings

½ cup canned crushed pineapples in juice
½ cup golden raisins
½ cup honey
1 Tbsp. canned chipotle pepper, minced
1 tsp. ground cumin
4 (4 oz.) salmon filets
salt, as needed
1 Tbsp. chopped fresh parsley, for garnish

1.    Preheat oven to 400°F. In small bowl, mix pineapple, raisins, honey, chipotle pepper and cumin together until well blended.
