Chesapeake Omelet Casserole

½ cup heavy cream
2 tsp. lemon juice
to taste, salt and pepper
¼ cup finely chopped green onions, including tops
¼ cup green peppers, diced
¼ cup red peppers, diced
2 tsp. lemon juice
8 oz. Phillips crab meat
3 Tbsp. butter
½ cup cheddar cheese DIRECTIONS:In a large mixing bowl, beat together eggs, cream, lemon juice, salt and pepper. Add onions and peppers to egg mixture. Fold in crab meat. Pour mixture into buttered oven-proof casserole or baking dish. Sprinkle on cheese. Bake at 375°F for 25-30 minutes, or until egg is set.
