The recently renovated Waterside Court food court in Houston's John P. McGovern Texas Medical Center has replaced national branded chains like KFC, Luther's Bar-B-Q, Einstein Bros. Bagels and TCBY with series of proprietary "chef-driven minirestaurants" serving foods made with fresh ingredients.
The food court, managed by a pair of local restaurant operators, retained a pre-existing sushi stand and a Korean themed outlet called Little Kim Son and added new concepts like Hugo's Mexican Taqueria, Salaam Mediterranean Cafe and Azalea Bakery. The menus and concepts were all developed either by food court operators Tracy Vaught and Chef John Watt or other local restaurateurs.
