College operators sound off on local and gluten-free

A Food Management roundtable at the recent NACUFS college dining conference delves into the growing food trends of gluten-free and local purchasing.

A group of college dining operators gathered in Denver at the recent NACUFS conference for a leadership roundtable hosted by Food Management and sponsor Dr. Schar. The group discussed a host of topics, from technology and labor to diversity and menu planning. We’ll cover those topics in the coming weeks; however, this week we delve into two purchasing areas—gluten-free and local.
