Several years ago, I visited the campus of the University of Michigan. It’s big, with lots of students and lots of dining locations. But it’s all at a much smaller scale now, according to Steve Mangan, senior director Michigan Dining, due to the limitations of students on campus during coronavirus.

In this episode of FM On Demand, I catch up with Steve to see how his program is dealing with COVID and what changes he thinks will stick in the future of college dining programs.
