Pop-ups add pizzazz to dining at Sam’s Club

From steaks made to order to gourmet burgers and high-end seafood, special concepts highlight the transformed dining operation at the mega retailer’s Arkansas headquarters.

Ever since Daniel Concepcion took over heading the self-operated dining operations at the Sam’s Club headquarters in Bentonville, Ark., hungry associates have had to start watching their waistlines. That’s because Concepcion, a former Las Vegas resort and restaurant chef who took over as Sam’s Club’s executive chef at the beginning of 2018, has been busy upgrading what had been a fairly staid program into one that emphasizes scratch cooking, fresh ingredients and menu pizzazz.
