Using readily available fresh citrus for décor, along with these cute pineapple lights, the Advocate Condell dining area was transformed into Bob Marley’s old neighborhood for a few delicious hours.
“We had a blast hosting this unofficial celebration of Bob Marley’s birthday,” Markwell says.
“It was -10°F here in Illinois on February 9 [Marley’s actual birthday is Feb. 6, 1945],” Markwell says. “This Virtual Vacation including delicious cuisine, reggae and a tropical atmosphere really helped warm the soul!”
Interpreting a dream of travel was the spark that got this event started.
One of the Caribbean’s most famous dishes, jerk chicken is characterized by the rub applied to chicken before grilling: traditionally thyme, cayenne, paprika, cinnamon, allspice and sometimes brown sugar to round it out.
