Beyond the Box Lunch

RA’s Executive Working Lunch program lays a quality spread for execs in the midst of meetings

Michael Gallagher
Vice President of Culinary
Restaurant Associates
“Our Executive Working Lunch program offers an elegant combination of soup, salad and sandwich, all arranged on a single serving piece. There is an option to provide a Japanese bento box with more upscale food. It provides privacy at the request of the clients, yet allows for an upscale dining experience even during time-constrained meetings or those held in secure rooms.”

Jason LaPrade
Regional Catering Coordinator Sodexho
Campus Services

“Our Executive Box Lunches offer unique, tasteful and well-presented meals that transcend the traditional box lunch. They feature high-quality cold plated meals that come complete with sides and utensils for easy travel in a glossy white box. It can be used to target conferences during the summer months and large events such as commencement and reunions. The boxes can also be customized to fit the client’s needs with seasonal offerings and options.”

Paul Correnty
Food Service Director
Harvard (MA) Public Schools

“The Harvard Schools catering program is geared to more casual shindigs as opposed to fancier tuxedoed waiter events. There is emphasis on the food being fresh, tasty and healthy rather than fancy. Nevertheless, I find it fairly easy to gussy up the platters of food that we present at these events. We are fortunate to live in an area where traditional apple or vegetable farmers have seen the writing on the wall and over the past decade diversified their crops. What I do then is use some of the unique, fresh and unusual produce that they have made available to fancy up our catered meals.”

Michael Hutter
Director of Special Events
New York City Schools SchoolFood
“The current trend at School- Food is to enjoy our tasty wraps and sandwiches like Turkey Wrap with Cranberry Chutney (see recipe below) and Honey Bacon Glazed Ham Sandwich paired with a blend of crispy greens. SchoolFood events range from business lunches for 25 adults to celebrations such as the one during the holiday season at which 4,000 NYC Public School students with special needs enjoy ‘Operation Santa’ at New York City’s John F. Kennedy Airport.”
