Warm beets and goat cheese

Beets are an earthy, rustic plant component in French cooking, as in this dish from Executive Chef Joshua Smith at Bardot Brasserie. Just toss beets in olive oil, salt and herbes de Provence. Wrap them in foil and roast in a 350° oven about an hour or more. They can be used in salads alongside greens, cheeses and charcuterie for an earthy note that brings the French country to the table.
